Dried fruits are dried fruits or berries with a residual moisture content of about 20%. They are dried either naturally (for example, in the sun), or using industrial methods (for example, using a dehydrator or a vegetable dryer). Dried fruits are rich in vitamins (A, B1, B2, B3, B5, B6) and mineral elements (iron, calcium, magnesium, phosphorus, potassium, sodium), contain about 250 kcal and 1.5 — 5 g of protein per 100g. They have a long shelf life and do not require storage in a cold place. This is one of their main advantages, and in this regard they are a convenient alternative to fresh fruits (especially during the lean season). However, during drying, the dried fruit loses most of its vitamin C.
